This is a fresh salad with hot barbequed fish and Italian flavours.It is tasty and can be easily consumed by people on weight loss as well.
• 2 tsp olive oil
• 2 lemons
• Sea salt as per taste
• Black pepper powder
• 400 g fish fillets (tuna, mackerel, trout)
• 1 tsp oregano
• 8 ripe tomatoes
• 2 tsp vinegar
• 1 tsp red chilli flakes
• 2 small spring onions with leaves.
1.Mix together olive oil, lemon juice and a pinch of salt and pepper.Sprinkle this all over the fish.Then sprinkle oregano as well.Place your fillets on the hottest part of the grill(make sure your grill is really clean to prevent the fish from sticking.)
2.If your fillets are 2cm thick, they will only need about 2 minutes cooking time. If the fish breaks up, do not worry as you will be flaking it up later anyway. If it still has the skin on, cook it skin-side down as it is less likely to stick. Once cooked, remove to a warm plate.
3.To make the salad, finely slice the tomatoes and season with salt and pepper.Finely slice your spring onion along with few leaves and dress it in a bowl with extra virgin olive oil and lemon juice. Season with salt and pepper then scatter over your tomatoes.
4.Finally, spoon over your fish, flaking it as you go. Scatter over your reserved onions, drizzle with vinegar and scatter with chilli flakes, if using, to finish.
5.Your tasty fish salad is ready.
