Grilled Sole Fish rich in Vitamin C
Sole fish is rich in proteins as well as calcium.Lemon juice adds Vitamin C to the recipe.
Preparation time: 2 hrs(Marination)
Cooking time: 15-20 mins
Makes 2 servings
·2 fillets of Sole fish
·2 tsp oil
·4 tsp lemon juice
·3 garlic cloves,finely chopped
·2 tsp parsley,finely chopped
·5-6 basil leaves
·11-12 onion rings
·Salt as per taste
·Black pepper as per taste.
1. Spread one tsp of oil in a bowl. Add the lemon juice,salt and pepper,stir gently.Then add garlic, parsley and basil leaves, stir gently. Your marinade is ready.
2. Gently roll the fish in the marinade, add the onion rings and keep it in the fridge for 2 hours.
3. Then heat one tsp of oil in a pan and add the fish with the onions rings.
4. Cook the fish 2 mins each side using the marinade as a basting sauce.
While serving, add 1 tsp of marinade juice over the fish.Garnish with coriander and pepper.
