Calcium-rich Pitla

Adding fresh,crunchy, calcium-rich cauliflower greens to the traditional pitla adds to the iron and vitamin C content of besan. Can be served with whole wheat bhakri.

Makes 4 servings


3/4 cup chopped cauliflower greens
1/2 cup besan(bengal gram flour)
2 tsp oil
1 tsp mustard seeds ( rai )
a pinch of asafoetida(hing)
curry leaves (kadi patta)
2 tsp garlic(lehsun) paste
1/2 tsp turmeric powder (haldi)
salt totaste
1 1/2 tsp chillipowder
1 tbsp lemon juice



  1. Combine the besan and 3 cups of water in a deep bowl and mix well till no lumps remain. Keep aside.
  2. Heat the oil in a deep non-stick pan and add the mustard seeds.
  3. When the seeds crackle, add the asafoetida and curry leaves and sauté on a medium flame for a few seconds.
  4. Add the cauliflower greens and garlic paste and sauté on a medium flame for another 2 minutes.
  5. Add the turmeric powder, salt, chilli powder and besan-water mixture, mix well and cook on a medium flame for 3 to 4 minutes or till the mixture thickens, while stirring continuously.
  6. Add the lemon juice and mix well.
  7. Serve immediately with whole wheat bhakri.
